Hi, I'm Tanya!

Hey Guys! It’s been a while since I’ve been in the kitchen, but I’m back with another recipe I whipped up the other day. Banana Fritters or pancakes as some may call it, is the choice. I have an obsession with Banana fritters it’s the only reason I buy bananas at the supermarket if I’m being honest. This is a very simple recipe and can be eaten any time such as a for breakfast, lunch, dinner and just as a snack. For me I mainly use it for breakfast and usually make enough so that I can have for a snack throughout the day and sometimes it rolls into dinner whenever I’m too lazy to actually make dinner lol. The recipe is as follows:

INGREDIENTS

2-3 ripe bananas(starting to turn brown)

1 1/2 cups of flour

1/4 cup of milk(optional)

2-3 tablespoons of brown sugar(white can also be used)

1/4 teaspoon of vanilla extract( I used almond extract)

pinch of salt

1/2 teaspoon nutmeg and cinnamon(optional)

oil for frying

INSTRUCTIONS

Peel bananas and place into a large bowl

smash them with a fork or masher until soft and somewhat runny

add sugar, vanilla extract, milk, salt and flour and mix

heat oil in frying pan on medium heat

add  tablespoons of batter in at a time, that way fritters will all be the same size

when the edges become firm and dark turn over and cook the opposite side.

drain onto paper towels

Serve and Enjoy!
